Ingredients 2 large chicken breasts 4 tablespoons balsamic dressing ¼ teaspoon salt ¼ teaspoon black pepper ¼ teaspoon garlic powder 10 ounces (approx. 1 bag) spinach 1 medium Red Delicious apple, diced 1 8.25-ounce can mandarin oranges, drained 2 tablespoons Gorgonzola cheese 1 tablespoon dried cranberries Directions • Mix uncooked chicken with 1 teaspoon of the balsamic dressing and season with salt, black pepper and garlic powder. • Bake chicken in oven at 425 degrees for 10 minutes, or until meat probe reads 165 degrees. • Let chicken rest at room temperature for 10 minutes. • Dice chicken into ½-inch cubes. Set aside. • Place spinach in a large bowl, add chicken, apple, oranges, Gorgonzola cheese, dried cranberries and remaining balsamic dressing. • Gently mix all ingredients together until the dressing evenly coats the spinach leaves. • Add chicken, toss gently and enjoy.
